Hospitality and Catering is an engaging and sociable working environment, with a range of career opportunities. This course is for anyone who wants to improve their skills and knowledge in professional cookery or front of house service in a restaurant and bar. You will get the chance to practise your skills at the East restaurant on our Lowestoft campus and through working at college functions and events. Working in the hospitality and catering industry can be demanding and this course will also need a high level of commitment, but it’s also a lot of fun.
Areas covered include:
- Food safety and knife skills
- Technical Skills: Preparing meat, fish, poultry, vegetables, pastry, dough, soups, sauces, pasta and rice
Your study will be hands-on in both East restaurant and at functions on the campus. This will provide you with opportunities to cater for lunches and dinners, as well as for special events.
There will be theory sessions to research and support assignments that cover the practical activities for all outcomes and will also sample underpinning knowledge to verify coverage of the unit.
Work experience is part of the study programme and previous students have worked for Tom Kerridge, Jamie Oliver and Raymond Blanc.
You will need to have achieved at least four GCSEs at grade 4 or above.
Technical competence is assessed by observation which is tracked and maintained individually by each student. The programme is monitored by internal quality assurance and external verification by City and Guilds.
You can progress to Professional Cookery Level 3.
Former students from the catering department work locally, nationally and internationally in a range of roles. Some have gone on to set up their own businesses, while others have gone on to gain experience at top restaurants and worked for internationally renowned chefs.
