This course is for anyone who wants to develop their front of house and cookery skills for a career in the Hospitality Industry. Working in the hospitality and catering industry can be demanding and this course will also need a high level of commitment (100 per cent), but it’s also a lot of fun.

Areas covered include:

  • Food safety and knife skills
  • Technical Skills: Preparing meat, fish, poultry, vegetables, pastry, dough, soups, sauces, pasta and rice

Your study will be hands-on in both East restaurant and at functions on the campus. This will provide you with opportunities to cater for lunches and dinners, as well as for special events.

There will be theory sessions to research and support assignments that cover the practical activities for all outcomes and will also sample underpinning knowledge to verify coverage of the unit.

Work experience is part of the study programme and previous students have worked for Tom Kerridge, Jamie Oliver and Raymond Blanc.

Requirements

Former students from the catering department work locally, nationally and internationally in a range of roles. Some have gone on to set up their own businesses, while others have gone on to gain experience at top restaurants and worked for internationally renowned chefs. It is also possible to progress to other courses to help you develop further skills in the catering and hospitality industry.
This course introduces you to a career in the Hospitality Industry. Some students may also wish to go take on an advanced Apprenticeship

Assessment

Technical competence is assessed by observation which is tracked and maintained individually by each student. The programme is monitored by internal quality assurance and external verification by City and Guilds.

Progression
