This course is designed for learners who are passionate about food and want to develop the practical skills, knowledge and confidence needed to work in a professional kitchen. Whether you’re leaving school, looking to gain a recognised qualification or considering a future career as a chef, this course provides an excellent introduction to the catering industry.
Throughout the course, you will learn essential cookery techniques and gain hands-on experience in a professional training kitchen. You will develop an understanding of food safety, health and safety in the workplace, nutrition, kitchen organisation, and the skills required to prepare and cook a range of dishes to industry standards. The course covers a variety of cooking methods including boiling, poaching, steaming, baking, roasting, grilling and frying, helping you build a strong foundation for future progression.
Units may study include:
- Investigating the hospitality and catering industry
- Food safety in catering
- Healthier foods and special diets
- Preparing and cooking stocks, soups and sauces
- Preparation and cooking of fruit and vegetables
- Preparation and cooking of meat, offal, poultry, fish and shellfish
- Preparation and cooking of rice pasta, grains and egg dishes
- Producing hot and cold desserts, puddings, biscuit, cake and sponge products

Requirements
For Level 1 entry, you will need to have achieved at least three subjects at GCSE at grade 3 or above including English and maths.
Progression to Level 2 is via completion of the Level 1 course.
Assessment
Practical assessments/demonstrations – learners prepare, cook and present dishes while demonstrating safe working practices and correct culinary techniques. Assignments and portfolio evidence, learners complete written or practical tasks and gather evidence of their skills and knowledge. Knowledge tests or multiple-choice examinations, these assess underpinning knowledge such as food safety, health and safety, ingredients, equipment, and culinary processes.
Progression
Upon completion of this course, you’ll have the opportunity to progress on to a level 2 Culinary skills or Professional cookery course.
